How to make Becky’s Galactic Chocolate Cupcakes
Ingredients
Cake mixture
- 125g butter
- 50g cocoa powder
- 400g dark sugar
- 250g self-raising flour
- 250ml Galactic Milk Stout
- 2 tsp vanilla extract
- 1 tsp bicarbonate soda
- 2 eggs
Icing
- 70g butter
- 150g icing sugar
- 25g cocoa powder
- 2 tsp milk
- 1 tsp vanilla
Method
- Melt the butter with the stout on a medium heat
- Take it off the heat and add in the brown sugar
- Mix in the cocoa powder and give it a good whisk
- Whisk the eggs and vanilla extract in a separate bowl
- Add into the chocolate stout mix
- Give it a good stir
- Add in half the flour and fold it
- Add in the other half and give it a whisk / fold
- It should look like a rich thick cake mix
- Pop a couple of tablespoons of the mix into cupcake cases and cook for 20 mins at 200°C
- After 20 mins, stick a cocktail stick in the middle of one, double check the stick comes out clear and we’re good to
- Icing mixture time. Beat the butter and half the icing sugar

- Add the cocoa powder and vanilla and keep whisking
- Pop in a good glug of stout
- Add the milk and give it a further whisk
- Make a little makeshift piping bag and start icing them cakes!
